Changes of the Qualities and Active Components of New Carrot Cultivar ¡®Tamnahong¡¯ According to Different Harvest Time

Abstract

|
This study was conducted to investigate the quality characteristics of the new carrot cultivar ¡®Tamnahong¡¯ and changes in its active ingredients with time, so as to select the optimal harvesting time, and evaluate the possibility of growing these carrots as an alternative to imported products such as the Dream7 cultivar. For this purpose, the quality characteristics (hardness, color, pH, and sugar content), active ingredients (total phenols and flavonoids, total carotenoids, ¥á, ¥â-carotenes, and vitamin C), and antioxidant activity of ¡®Tamnahong¡¯ and Dream7, which were harvested seven times at 10 day intervals from December 17, 2020, to February 15, 2021, were investigated. The hardness of the carrots did not show significant differences according to harvesting time and varieties, but pH value and sugar content (Brix) decreased as the harvesting time was delayed. The brightness (Hunter L) value did not differ according to the harvest time, but the external redness (a value) tended to decrease. The internal redness of the ¡®Tamnahong¡¯ was about 55¡58% higher than that of Dream7. The content of secondary metabolites such as total phenols and flavonoids, total carotenoids, ¥á, ¥â-carotenes, and vitamin C of the ¡®Tamnahong¡¯ was similar to that of Dream7, and the content of active ingredients decreased as the harvest time was delayed. The results of this study show that the new cultivar carrot ¡®Tamnahong¡¯ has superior quality characteristics or equal quality properties compared to the Dream7 cultivar that is widely cultivated. In addition, the optimal harvesting time is suggested to be mid-December rather than February. Finally, the new carrot cultivar ¡®Tamnahong¡¯ shows adequate quality characteristics and can be considered as an alternative to the imported carrot Dream7.
